Ingredients
- Dough:
- 1 cup (250 ml) whole wheat flour
- 1 tsp (5 ml) baking powder
- 1 tsp (5 ml) baking soda
- 1 tsp (5 ml) salt
- First mixture:
- 1/3 cup (85 ml) oil
- 1/2 cup (125 ml) brown sugar
- 1 egg, large
- 1 cup (250 ml) banana, ripened
- 1/2 cup (125 ml) All-Bran cereal
- 1 tsp (5 ml) vanilla
- Second mixture:
- 1/2 cup (125 ml) raisins
Steps
- Preheat oven to 350°F (180°C).
- In a bowl, mix together the 4 dough ingredients: flour, baking powder, baking soda and salt.
- In another bowl, one by one, mix together the oil, brown sugar, egg, banana, cereal and vanilla, beating well after each addition.
- Stir flour mixture into banana mixture and mix together well.
- Stir in raisins last.
- Pour into large muffin cups lined with a paper or lightly greased, each cup 3/4 full.
- Bake at 350°F (180°C) for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
