Ripe bananas can be stored in the freezer until you're ready to use them. Thaw them for about one hour before starting the recipe.

Ingredients

  1. 60 ml (1/4 cup) butter 
  2. 125 ml (1/2 cup) sugar 
  3. 2 ripe bananas, mashed 
  4. 2 eggs 
  5. 500 ml (2 cups) flour 
  6. 10 ml (2 tsp) baking powder 
  7. 2 ml (1/2 tsp) baking soda 
  8. 2 ml (1/2 tsp) salt 
  9. 125 ml (1/2 cup) milk

Steps

  1. Beat butter until creamy.
  2. Add sugar and mashed banana.
  3. Mix well.
  4. Beat in eggs one at a time, beating well after each addition.
  5. Mix dry ingredients.
  6. Gradually incorporate the dry ingredients, alternating batches with milk.
  7. Pour into a buttered and floured loaf pan.
  8. Bake in preheated oven at 180°C (350°F) for about 50 minutes or until a knife inserted in center of dough comes out clean.
