Audrey's Chicken Fajitas

You can also add vinaigrette to the lettuce.

Ingredients

  1. 4 chicken breasts 
  2. 1 green pepper, diced 
  3. 1 red onion, diced 
  4. 1/2 lb (225 g) mushrooms, sliced 
  5. 1 cup (250 mL) Diana brand Chicken and Ribs Marinade sauce  
  6. Salt and pepper, to taste 
  7. 4 tortillas 
  8. 1/2 iceberg lettuce, cut in strips 
  9. Sour cream, to taste 
  10. Mild salsa, to taste 
  11. Cheese, to taste

Steps

  1. Cut the chicken breasts in strips and combine with the cut vegetables. Add the marinade sauce, salt and pepper. Let marinate for 2 to 3 hours.
  2. In a skillet, cook the marinated chicken and vegetables thoroughly, about 15 minutes.
  3. Spread out a tortilla and spread sour cream and salsa to taste. Add the chicken and vegetables on top and sprinkle with cheese and lettuce.
  4. Fold the bottom of the tortilla and then fold in the left and then right side. Hold closed using a toothpick.
  5. Cook in the oven at 350 F (180 C) for about 5 minutes, until the cheese is melted.
