You can also add vinaigrette to the lettuce.
Ingredients
- 4 chicken breasts
- 1 green pepper, diced
- 1 red onion, diced
- 1/2 lb (225 g) mushrooms, sliced
- 1 cup (250 mL) Diana brand Chicken and Ribs Marinade sauce
- Salt and pepper, to taste
- 4 tortillas
- 1/2 iceberg lettuce, cut in strips
- Sour cream, to taste
- Mild salsa, to taste
- Cheese, to taste
Steps
- Cut the chicken breasts in strips and combine with the cut vegetables. Add the marinade sauce, salt and pepper. Let marinate for 2 to 3 hours.
- In a skillet, cook the marinated chicken and vegetables thoroughly, about 15 minutes.
- Spread out a tortilla and spread sour cream and salsa to taste. Add the chicken and vegetables on top and sprinkle with cheese and lettuce.
- Fold the bottom of the tortilla and then fold in the left and then right side. Hold closed using a toothpick.
- Cook in the oven at 350 F (180 C) for about 5 minutes, until the cheese is melted.
