Arianne's Quinoa Salad

Ingredients

  1. 2 cups quinoa 
  2. 1 red pepper, diced 
  3. 1 yellow pepper, diced 
  4. 100 g of feta cheese 
  5. 4 tablespoons tahini (sesame butter) 
  6. 5 tablespoons olive oil 
  7. 3 tablespoons lemon juice 
  8. 3 cloves garlic, finely chopped 
  9. 4 cups water 
  10. Parsley to taste 
  11. Salt and pepper to taste

Steps

  1. Rinse quinoa. Cook over low heat in 4 cups of water for 15 minutes. Cover and let stand a few minutes after cooking to allow the grains to swell.
  2. Meanwhile, combine the tahini, olive oil, lemon juice and garlic.
  3. Put quinoa in a large bowl. Add the peppers, feta cheese and parsley.
  4. Add vinaigrette. Mix well and serve.
