Ingredients
- 2 cups quinoa
- 1 red pepper, diced
- 1 yellow pepper, diced
- 100 g of feta cheese
- 4 tablespoons tahini (sesame butter)
- 5 tablespoons olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic, finely chopped
- 4 cups water
- Parsley to taste
- Salt and pepper to taste
Steps
- Rinse quinoa. Cook over low heat in 4 cups of water for 15 minutes. Cover and let stand a few minutes after cooking to allow the grains to swell.
- Meanwhile, combine the tahini, olive oil, lemon juice and garlic.
- Put quinoa in a large bowl. Add the peppers, feta cheese and parsley.
- Add vinaigrette. Mix well and serve.
