Start your day with a hearty muffin that combines whole wheat and oats with apples and warm spices.
Ingredients
- 1-3/4 cups (425 mL) quick-cooking rolled oats
- 1-3/4 cups (425 mL) plain 1% or 2% yogurt
- 2 eggs
- 1 cup (250 mL) shredded peeled apple
- 1/4 cup (50 mL) vegetable oil
- 1 tsp (5 mL) vanilla
- 2 cups (500 mL) whole wheat flour
- 3/4 cup (175 mL) packed brown sugar
- 4 tsp (20 mL) Baking powder
- 2 tsp (10 mL) cinnamon
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) each nutmeg and salt
- 3/4 cup (175 mL) raisins or dried cranberries
Steps
- In bowl, combine oats and yogurt; let stand for 10 minutes. Whisk in eggs, apple, oil and vanilla.
- In large bowl, combine flour, sugar, baking powder, cinnamon, baking soda, nutmeg and salt. Pour yogurt mixture over dry ingredients.
- Sprinkle with raisins; stir just until moistened. Spoon into greased or paper-lined muffin cups.
- Bake in centre of 375°F (190°C) oven for 35 minutes or until golden brown and tops are firm to touch.
- Let cool in pan on rack for 5 minutes; transfer to rack and let cool completely. (Can be stored in airtight container for up to 1 day or frozen for up to 2 weeks.)
