Apple Oat Muffins

Start your day with a hearty muffin that combines whole wheat and oats with apples and warm spices.

Ingredients

  1. 1-3/4 cups (425 mL) quick-cooking rolled oats 
  2. 1-3/4 cups (425 mL) plain 1% or 2% yogurt 
  3. 2 eggs 
  4. 1 cup (250 mL) shredded peeled apple 
  5. 1/4 cup (50 mL) vegetable oil 
  6. 1 tsp (5 mL) vanilla 
  7. 2 cups (500 mL) whole wheat flour 
  8. 3/4 cup (175 mL) packed brown sugar 
  9. 4 tsp (20 mL) Baking powder 
  10. 2 tsp (10 mL) cinnamon 
  11. 1 tsp (5 mL) baking soda 
  12. 1/2 tsp (2 mL) each nutmeg and salt 
  13. 3/4 cup (175 mL) raisins or dried cranberries

Steps

  1. In bowl, combine oats and yogurt; let stand for 10 minutes. Whisk in eggs, apple, oil and vanilla.
  2. In large bowl, combine flour, sugar, baking powder, cinnamon, baking soda, nutmeg and salt. Pour yogurt mixture over dry ingredients.
  3. Sprinkle with raisins; stir just until moistened. Spoon into greased or paper-lined muffin cups.
  4. Bake in centre of 375°F (190°C) oven for 35 minutes or until golden brown and tops are firm to touch.
  5. Let cool in pan on rack for 5 minutes; transfer to rack and let cool completely. (Can be stored in airtight container for up to 1 day or frozen for up to 2 weeks.)
