Apple Muffins

Ingredients

  1. Topping: 
  2. 1/2 cup (100 g) brown sugar, packed 
  3. 1/3 cup (38 g) flour 
  4. 1 tsp (5 g) cinnamon 
  5. 2 tbsp (30 mL) melted butter 
  6.  
  7. Batter: 
  8. 2-1/4 cup (225 g) flour 
  9. 1 tsp (5 g) baking soda 
  10. 1/2 tsp (2 g) salt 
  11. 1 egg 
  12. 1 cup (250 mL) milk 
  13. 1 tbsp (15 mL) lemon juice 
  14. 1/2 cup (125 mL) melted butter 
  15. 1 tsp (5 mL) vanilla extract 
  16. 1 1/2 cup (300 g) brown sugar 
  17. 2 cups (500 mL) apple, diced

Steps

  1. Preheat the oven to 375 F (190 C).
  2. Topping: In a bowl, combine the brown sugar, flour and cinnamon. Add the butter and mix with a fork.
  3. Batter: In a large bowl, combine the flour, baking soda and salt.
  4. In a separate bowl, beat the egg with the milk, lemon juice, butter and vanilla.
  5. Add the brown sugar while stirring. Pour this mixture over the dry ingredients. Add the diced apple and stir until combined.
  6. Grease muffin cups and fill 3/4 of the way. Add the topping.
  7. Bake for about 25 minutes or until a toothpick inserted into the centre come out clean and the muffin tops are golden.
