Ingredients
- Topping:
- 1/2 cup (100 g) brown sugar, packed
- 1/3 cup (38 g) flour
- 1 tsp (5 g) cinnamon
- 2 tbsp (30 mL) melted butter
- Batter:
- 2-1/4 cup (225 g) flour
- 1 tsp (5 g) baking soda
- 1/2 tsp (2 g) salt
- 1 egg
- 1 cup (250 mL) milk
- 1 tbsp (15 mL) lemon juice
- 1/2 cup (125 mL) melted butter
- 1 tsp (5 mL) vanilla extract
- 1 1/2 cup (300 g) brown sugar
- 2 cups (500 mL) apple, diced
Steps
- Preheat the oven to 375 F (190 C).
- Topping: In a bowl, combine the brown sugar, flour and cinnamon. Add the butter and mix with a fork.
- Batter: In a large bowl, combine the flour, baking soda and salt.
- In a separate bowl, beat the egg with the milk, lemon juice, butter and vanilla.
- Add the brown sugar while stirring. Pour this mixture over the dry ingredients. Add the diced apple and stir until combined.
- Grease muffin cups and fill 3/4 of the way. Add the topping.
- Bake for about 25 minutes or until a toothpick inserted into the centre come out clean and the muffin tops are golden.
