Ingredients

  1. 1 cup (250 mL) whole wheat flour 
  2. 1 cup (250 mL) bran flakes cereal, lightly compacted 
  3. 2 tsp (10 mL) baking powder 
  4. 1 tsp (5 mL) ground cinnamon 
  5. 1/2 tsp (2 mL) salt 
  6. 1 cup (250 mL) apple- peeled and diced ½ inch 
  7. 1/2 cup (125 mL) Splenda Brand No Calorie Sweetener, granulated 
  8. 1/4 cup (60 mL) butter, room temperature 
  9. 1/4 cup (60 mL) buttermilk 
  10. 1/4 cup (60 mL) unsweetened apple sauce 
  11. 2 eggs 
  12. Additional ground cinnamon for sprinkling

Steps

  1. Preheat oven to 400°F (200°C) and prepare a 12 cup muffin tin with baking spray
  2. Combine the whole wheat flour, bran flakes cereal, baking powder, ground cinnamon and salt in a mixing bowl.
  3. Toss the diced apples into the dry mixture.
  4. Beat the Splenda and butter together in a separate bowl.
  5. Add the buttermilk, apple sauce, and eggs to the butter and Splenda mixture. Continue beating until thoroughly combined.
  6. Combine the mixtures in the two bowls together to form a batter.
  7. Spoon the mixture evenly into the prepared muffin tin, approximately two thirds full in each.
  8. Sprinkle a small amount of cinnamon on each muffin.
  9. Bake for 15 minutes.
  10. Cool in pan before serving.
