Anne-Marie's Chicken Enchiladas

If you wish, serve with salsa and sour cream. You can replace the chicken with cooked turkey. A real treat! My friends and family go crazy over this recipe.

Ingredients

  1. 1 onion, chopped 
  2. 2 tbsp (30 mL) butter 
  3. 1-1/2 cups (375 mL) cooked chicken, chopped 
  4. 1-1/2 cups (375 mL) mild salsa 
  5. 1 package (250 g) cream cheese, cubed 
  6. 1 tsp (5 mL) ground cumin  
  7. 2 cups (500 mL) Cheddar cheese, grated 
  8. 8 tortillas

Steps

  1. Preheat the oven to 350 F (180 C).
  2. Cook the onion in butter over medium heat, for 2 minutes.
  3. Add the chicken, 1/4 cup (50 mL) salsa, cream cheese and cumin. Cook until the mixture is very hot.
  4. Add 1 cup (250 mL) of the Cheddar.
  5. Place about 1/3 cup (75 mL) of the mixture in the center of each tortilla. Roll the tortilla and place it in a 12x8 inch (30x20 cm) dish, with the fold side down.
  6. Cover with the remaining salsa and cheese.
  7. Cook in the oven for 20 minutes at 350 F (180 C).
