If you wish, serve with salsa and sour cream. You can replace the chicken with cooked turkey. A real treat! My friends and family go crazy over this recipe.
Ingredients
- 1 onion, chopped
- 2 tbsp (30 mL) butter
- 1-1/2 cups (375 mL) cooked chicken, chopped
- 1-1/2 cups (375 mL) mild salsa
- 1 package (250 g) cream cheese, cubed
- 1 tsp (5 mL) ground cumin
- 2 cups (500 mL) Cheddar cheese, grated
- 8 tortillas
Steps
- Preheat the oven to 350 F (180 C).
- Cook the onion in butter over medium heat, for 2 minutes.
- Add the chicken, 1/4 cup (50 mL) salsa, cream cheese and cumin. Cook until the mixture is very hot.
- Add 1 cup (250 mL) of the Cheddar.
- Place about 1/3 cup (75 mL) of the mixture in the center of each tortilla. Roll the tortilla and place it in a 12x8 inch (30x20 cm) dish, with the fold side down.
- Cover with the remaining salsa and cheese.
- Cook in the oven for 20 minutes at 350 F (180 C).
