Amanda's Ginger Yam Mash

Ingredients

  1. 2 large yams (approximately 2 lb), peeled and cut into chunks 
  2. 2 tbsp non-hydrogenated margarine 
  3. 1 tbsp grated fresh ginger 
  4. 1 tbsp olive oil 
  5. Salt and freshly ground pepper 
  6. 2 tbsp chopped cilantro (optional) 

Steps

  1. Bring a large pot of water to a boil.
  2. Place yams in water and cook until tender, approximately 20 minutes.
  3. Drain yams and set aside.
  4. Using same pot, melt margarine over medium-low heat.
  5. Add ginger and cook until softened, 5 to 10 minutes.
  6. Mix thoroughly, add salt and pepper to taste and sprinkle with fresh cilantro (if using) to serve. Serves 4 to 5.
