Amanda's Ginger Yam Mash

Ingredients
- 2 large yams (approximately 2 lb), peeled and cut into chunks
- 2 tbsp non-hydrogenated margarine
- 1 tbsp grated fresh ginger
- 1 tbsp olive oil
- Salt and freshly ground pepper
- 2 tbsp chopped cilantro (optional)
Steps

Bring a large pot of water to a boil.

Place yams in water and cook until tender, approximately 20 minutes.

Drain yams and set aside.

Using same pot, melt margarine over medium-low heat.

Add ginger and cook until softened, 5 to 10 minutes.

Mix thoroughly, add salt and pepper to taste and sprinkle with fresh cilantro (if using) to serve. Serves 4 to 5.
