Aioli (Garlic Mayonnaise)

Ingredients

  1. 2 cloves garlic, finely chopped, almost pureed 
  2. 2 egg yolks 
  3. 1/2 tsp (3 g) salt 
  4. Pinch pepper 
  5. 1/2 tsp (3mL) Dijon mustard 
  6. 1 cup (250 mL) olive oil 
  7. 3 to 4 tsp (15 to 20 mL) wine vinegar

Steps

  1. With a mixer or in a food processor, combine the garlic, eggs, salt, pepper and mustard.
  2. Drizzle in the oil while the machine is on.
  3. Add the vinegar.
  4. Pour into a serving bowl and serve with vegetables or on potatoes.
